If you’re looking to level up your steak and chicken dinner game, Santa Clarita’s La Meza Prime Meats off Copper Hill and Seco Canyon Dr, is the place to go.
La Meza Prime Meats isn’t just your typical local butcher, they are dedicated to providing Santa Clarita residents with top quality prime cuts, along with many unique and hard to come by options such as their “Picahna”. Picanha is a popular Brazilian cut of beef, prized for its tenderness and rich flavor, and La Meza is one of few butchers in the area to offer this unique cut.
We asked owner Israel Meza how to best enjoy Picanha and he was quick to suggest their “secret” Brazilian and Argentinian inspired Chimichurri sauce. They carry it in store so just ask!

My family’s favorite is their marinated Carne Asada, which they make in house. We asked both Israel and his daughter, Natalia Meza, what their favorites are:
- Israel Meza’s Perfect Dinner: Australian Wagyu Denver Steak. He says it has the perfect amount of marbling and the perfect size. His recommended way of cooking it is to sear on the grill for a couple minutes, then transfer to indirect heat to finish there (10-12 min) then cut thin slices against the grain.
- Natalia Meza’s Perfect Dinner: Filet Minion and Picanha. The filet is rich tender and has the perfect marbling. The picanha is unique, you can’t taste it anywhere else unless you go to a fancy restaurant.
We also learned that a well known pizza joint in the area buys nearly 80lbs of ground pork and beef per week from La Meza Prime. There’s a reason Santa Clarita families like mine continue to return to Israel’s butcher shop. As they say themselves: they’ve “mastered the art of fine meats”.
